BBQ Chicken Sandwiches are a sure-fire, crowd-pleasing way to feed whoever shows at the dinner table. I have found it an easy and inexpensive way to have hearty and nutritious lunches ready for our busy weekdays as well as camping trips, potluck dinners and picnics on the weekends.
This recipe is a super easy no-brainer recipe. I start by placing a whole frozen chicken in the crockpot before I go to bed. Cook on low overnight.
After coffee & breakfast the next morning, I take the meat off the bone (similar to when I make chicken broth), shred it with a fork and add our favorite BBQ sauce. I also add a bit of the broth from the crockpot to help keep it moist and flavorful.
That’s it! You can keep it in the crockpot set on warm until ready to serve or seal it in a ziploc bag, storing in the freezer for another day.
I often take this (frozen) on campouts. It’s thaws in the cooler, is easy to reheat, and could even be served up cold. I’ve served it at graduation celebrations when we had 60+ people at our house for a backyard BBQ. It makes delicious sandwiches sure to please.

I just did my first whole chicken in the crock pot today. It was wonderful and my hubby said, this would make great shredded chicken for BBQ sandwiches. And then I come up on your post!!! Now I can tell him he really had a great idea because I saw it on the internet. π Thanks for sharing.
