We are enjoying more routine days, with new activities and responsibilities thrown into the mix. We hit the school books soon after breakfast and morning chores are finished, but I also have a set time scheduled for my small business. On top of that, my grandchildren will be here one day each week and we spend Thursdays with our homeschooling co-op group. That means it’s more important than ever to have a plan for our meals. It only takes a few minutes and makes our days flow so much more smoothly.
Monday
- Breakfast – Breakfast Burritos
- Lunch – Tuna Salad
- Supper – Beef Fajitas
Tuesday
- Breakfast – Cereal w/ Fruit
- Lunch – Soup
- Supper – Smothered Venison (crockpot meal) w/ rice
Wednesday
- Breakfast – Baked Oatmeal
- Lunch – Homemade Mac n’ Cheese
- Supper – Chicken Giardino (loosely based on this recipe)
Thursday
- Breakfast – Pancakes
- Lunch – sandwiches (picnic lunch)
- Supper – KOTO (Kids On Their Own) because it’s DateNight for mom and dad!
Friday
- Breakfast – Toast & Fruit
- Lunch – Chef Salads
- Supper – Homemade Pizza
Saturday
- Breakfast – Blueberry Muffins
- Lunch – leftover pizza
- Supper – Hamburgers
Sunday
- Breakfast – Bagels
- Dinner – Pot Roast w/ potatoes & carrots

so glad you stopped by for a visit, Susan π My breakfast menu came from a desire to wean my children off cold cereal – it was a little pricey and did not ‘stick’ with them through the day. That and the fact that I like variety, so writing it down makes it easier to make everyone happy!
My mac n cheese recipe is simple – pre-cook noodles until slightly under-done (aldente?) Make a basic white sauce and add our favorite shredded cheeses – cheddar/monterey jack/ colby along with our favorite seasonings – mix the drained macaroni and the sauce together in a baking dish and bake til bubbly. I place a sheet of tinfoil loosely on top to keep from drying out. I’ll see if I can get it posted soon for you π

This is such a simple idea but I know it really cuts down on time and other things. I just have to make myself do it. Grocery shopping is much easier this way too.

I do a menu plan once a month, but it often get deviated from with life circumstances. It is our first year of homeschool co-op and with 3 children one who is tired the meals I am planning do not work. So I use those meals on another day and go with PBJ. This week went much smoother. FYI ramen noodle soup is NOT good cold π
ha ha, I hear ya when you talk about cold ramen! I can definitely relate π I do plan out my menus a month at a time, but keep it flexible so I can change things up as our schedules and days change. And I keep ‘backup’ items in the pantry and freezer, for those just-in-case days. We have to keep a lot of plates spinning, don’t we?
I am also getting back into the habit of sticking to my meal plan, and it was encouraging to see your’s! The chicken giardino recipe looks nice- I have never made that before. Thank you for sharing this π
