The temperature is rising and summer is now in full force so I am always on the lookout for recipes that won’t heat up the kitchen. Tomato-Basil Angel Hair Pasta is just the thing. This light and fresh recipe is delicious, using in-season tomatoes, fresh basil (although dried can be used) and just a few other ingredients. Serve with a salad and some crusty Italian bread and you have a summertime feast ready in minutes.
I first found this recipe several years ago in Hearth & Home, a cookbook written by Karey Swan, a fellow homeschooling friend of mine. My mouth begins to water as I wait in anticipation for our tomatoes to ripen each summer so I can enjoy this dish. While it is still delicious using store-bought tomatoes and herbs, being able to use our own is soooo satisfying.
I usually have these ingredients on hand, especially during the summer months, so it only takes a few minutes at the end of a busy day or when unexpected guests arrive. This dish is simple yet impressive – I know you’ll want to try it!
Tomato-Basil Angel Hair Pasta
Ingredients:
- 1 lb Angel Hair Pasta
- 1 to 1 1/2 lb Fresh Tomatoes
- 2 TBsp Olive Oil
- 4 Cloves Garlic, crushed or minced
- 4 TBsp Fresh Basil, chopped (or 2 TBsp if using dried)
- 1 tsp Salt
- Parmesan Cheese
~Cook pasta according to package directions.
~While pasta is cooking, combine tomatoes, olive oil, garlic, salt and basil in a large serving bowl.
~Stir.
~Drain pasta and and add to tomato mixture.
~Lightly toss.
~Sprinkle with Parmesan Cheese.
~Serve with a large green salad and garlic bread.
