Berries are one of Summer’s most wonderful pleasures and some of God’s purest treasures. I love it when I have fresh berries to serve up to my family. We are especially partial to berry desserts. Desserts like Blackberry Crisp. The recipe I use is so easy! But oh so delicious! It only takes a few minutes to put together and pop in the oven. The hardest part is the waiting! Although I’ve used fresh blackberries in this recipe, you could use any berry or combination of berries you like, resh or frozen. Blackberries are now ready in our area and looking mighty tasty! I’m surely some will find their way into this delicious cobbler-like dish, served up with homemade vanilla ice cream!
Linda’s Blackberry Crisp Recipe
For Filling:
- 4 cups fresh berries (or frozen)
- 4 TBSP sugar (I use evaporated cane juice, but any sweetener will work)
- 1 TBSP instant tapioca (if using frozen berries)
For Topping:
- 1/2 cup quick oats
- 1/2 cup rolled oats
- 3/4 cup brown sugar
- 1/2 cup ww flour (or flour of your choice)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/3 cup butter (cold, cut into small pieces)
In a 9×13 greased baking dish combine berries, sugar (& tapioca of using it). Set aside.
In a mixing bowl, combine oats, brown sugar, flour, cinnamon and nutmeg. Cut in butter until mixture is course and crumbly.
Sprinkle oat mixture over top of berry mixture.
Bake at 350 for 35 to 40 minutes, or until berries are hot and bubbly in center and topping is brown and crispy around edges.
Let stand at least 30 minutes before serving.
